Here's an excellent opportunity to try the classic German Eiswein style without the classically stellar pricetag. This lovely dessert wine is made from Silvaner grapes at their sweetest. The grapes have been deliberately allowed to freeze on the vine and are pressed while still frozen. The ice locks up most of the water, leaving a more concentrated, sweeter juice. Since the frozen grapes must be hand selected and processed immediately in the middle of the night while they are still frozen, production tends to be very limited and expensive. Look for refreshing sweetness balanced by high acidity in this delightful bottle from Hischbach & Sohne.
